The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.
Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, employee hygiene and issues with chemicals and how they're handled.
Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.
Below is a list of establishments that were inspected Sept. 12 through Sept. 25.
OUT OF COMPLIANCE:
Sweet House, 1208 Greensprings Drive, 25 violations.
Action: Violations include food employees eating in kitchen area, shrimp thawing at room temperature, which is not an approved thawing method, ready-to-eat food held for more than 24 hours and not being date marked, bedding and clothing materials in facility, indicating use of facility as living or sleeping quarters, employee not washing hands properly between tasks, 12 small insects inside bulk containers of rice crawling inside containers and over rice, 12 small flying insects inside each of two 5-gallon buckets of soy sauce, non-food contact linens such as aprons in kitchen area, with excessive filth and food residue, old food residue, bottle of bleach and large plastic bag filled with crumpled paper seen in handwash sink, wall in the rear exit door area made of plaster and is cracked, roughened, and not a smooth, easily cleanable surface, food employee did not use soap in handwashing procedure, raw chicken stored above/beside read-to-eat foods in walk-in cooler, utensils or equipment being used in contact with foods without being properly cleaned or sanitized, raw and cooked chicken, vegetables, and sauces stored directly on the floor in walk-in cooler, manual ware-washing equipment had build-up of filth and food residue, and not cleaned before use, facility is reusing cans, plastic containers, and plastic bags which are intended to be single-service or single-use to store portion foods intended for use or sale in facility, and all cooking equipment is encrusted with old food and grease.
Note: This is the second time this facility has been deemed out of compliance since October 2017.
Starbucks, 2044 Springwood Road, nine violations.
Action: Violations include no sign or poster at sink in one of two restrooms to remind employees to wash their hands, employee seeing wearing visor that did not restrain her hair, lack of heat sensitive test strips or waterproof digital, non-reversible thermometer to periodically check or verify that high-temperature mechanical ware-washing machine is functioning properly, and accumulation of static dust on the return air vent duct cover on the ceiling in the ware wash/storage area.
Note: This facility's inspection was done on Sept. 14. A follow-up inspection on Sept. 27 deemed the facility in compliance.
