The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.
Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, employee hygiene and issues with chemicals and how they're handled.
Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.
Below is a list of establishments that were inspected Aug. 14 through Aug. 20.
OUT OF COMPLIANCE:
The Crazy Tomato, 1738 Filbert St., 12 violations.
Action: Violations include sliced lunch meats, cheeses, fully cooked meats held between 50 to 58 degree, instead of 41 degrees or below as required, time being used instead of temperature to control ready-to-eat and potentially hazardous pizza without written procedures or documentation to verify disposition of food, heavy accumulation of static dust and food debris on fan guards in the pizza oven area, table-mounted can opener, cutting blade, food thermometer and storage sleeve had food residue on them and were not clean to the sight and touch, black mold-like residue were found on the soda machine dispensing nozzles, plumbing system not maintained and in good repair, and doors propped open and not protecting against the entry of insects, rodents, and other animals.
