The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, employee hygiene and issues with chemicals and how they're handled.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments that were inspected Aug. 8 through Aug. 13.

OUT OF COMPLIANCE:

Musso's Italian Restaurant, 450 E. Broadway, Red Lion, 12 violations.

Action: Violations include in-use utensils hanging from oven handles; handwash sink not having water temperature of at least 100 degree because the hot water was turned off due to a plumbing leak; cracked floor tiles; broken and or unfinished portions of the ceiling; employee with full beard involved in food preparation not wearing hair restraints; food in bain marie with an ambient air temperature of 50 degrees, which led to a disposal of 40 pounds of food valued at $80; water temperature of wash compartment of warewashing equipment was 79 degrees when it needs to be 110 or higher; employees not trained in food safety as it relates to reportable illnesses; and plumbing system not maintained in good repair.
