The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, employee hygiene and issues with chemicals and how they're handled.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments that were inspected July 25 through July 31.

OUT OF COMPLIANCE:

El Casero Restaurant, 250 E. Princess St. 26 violations

Action: Violations include wiping cloths in extremely unclean condition in kitchen area, food equipment stored directly on the floor instead of 6 inches above, dry food being stored in a container that previously stored a toxic or poisonous substance, raw animal foods stored above and on same shelf as ready-to-eat foods in the walk-in cooler, utensils or equipment being used in contact with food without being properly cleaned and sanitized prior to use, seasoned raw meat stored inside recycling can with accumulation of dirty water laying on top of the garbage bag covering the walk-in cooler area, mice droppings observed inside and around clean cooking equipment, kitchen and basement areas extremely dirty and in need of cleaning, ready-to-eat food in cool units being held for more than 48 hours not being marked with the date it was opened, and dead or trapped insects not being removed from control devices.

Note: This is the second time this facility has been deemed out of compliance since June 2017.

The Village at Sprenkle Drive, 1802 Folkemer Circle, 11 violations

Action: Violations include cleaned and sanitized untensils located in the kitchen area, stored with food contact surfaces, severely dented and swollen canned items found in the food storage room, refrigerated ready-to-eat cole slaw held for more than 24 hours and not date marked, floor and wall under and behind kitchen equipment is extremely dirty and in need of cleaning, lunch meats not datemarked and had to be discarded, ham and corned beef opened May 31 were ready to eat in the bain marie, but were beyond the seven day use or sell by date, and required discarding, and the handwashing sink near the dish machine does not have single-use towels, continuious towels, or an air drying device.

Hissho Sushi at Giant, 205 Glen St., Manchester, two violations

Action: Violations include monthly Hazard Analysis Critical Control Point verification records not being review monthly buy management. Hazard Analysis Critical Control Point, according to the FDA, is a management system where food safety is addressed.
