Hamir Patel's journey began about five years ago.

The self-taught chef, who lives in Manchester Township, loved to cook and began to cater events. His client base was strong and steady, and when Patel had an opportunity to pitch his eatery ideas to Taste Test, a restaurant incubator in York City, he had the support of the community.

Patel opened his own restaurant after participating in the incubator endeavor, which included an audition process and continual surveying of patrons to improve on concepts. His is the first incubator graduate to gain its own establishment.

A grand opening and ribbon-cutting ceremony on Thursday, Jan. 11, marked the restaurant's official opening at 24 S. George St. Community members, as well as government and city officials, gathered for the occasion.

"The environment I created is a family environment," Patel said. "I'm here to build relationships with the guests that walk in and treat them as such — as a family member."

When asked about the food, he speaks of combining Italian spice blends with Indian spices. 

"I love fusion food, and it creates a unique flavor which is not offered yet, and that's what I try to derive," Patel said.

He said he is a firm believer that food brings people together. 

"This place is here to build relationships," Patel told the crowd just before cutting the ribbon. "When you come in here, enjoy meeting others; start relationships with others. That's what it's all about."
