FOOD INSPECTIONS: 1 York County establishment out of compliance

The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, employee hygiene and issues with chemicals and how they're handled.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments that were inspected November 18- December 1.

OUT OF COMPLIANCE

Regular inspections:

York Buffet, 2965 Concord Road, 9 violations

Action: Violations included no person in charge being present during the inspection; spatula used in contact with pizza without being properly cleaned; bowls used as scoops in rice, flour and sauces; utensils stored in water at improper temperature; knives and cleavers stored improperly; fish, chicken and beef observed thawing in standing water; shrimp, beef and chicken observed thawing at room temperature on table outside cooler; time used to control ready-to-eat foods instead of temperature; muffin pans observed with food residue; mixing bowl observed with food residue; old food residue observed in hand wash sink; floor under equipment in kitchen observed extremely dirty; and static dust and grease observed on hood ventilation system.

Grace Ni, a manager at the restaurant, said all the violations have been fixed, and she checks every day to make sure everything is up to code.
