3 Hogs BBQ brings house-smoked meats, scratch-made sides to Central Market
A little more than four years after 3 Hogs BBQ opened its doors in Hanover, co-owners and chefs Matt Albright and Allen Kuhn decided to bring their house-smoked meats and scratch-made sides to downtown York with a stand in Central Market.
"It's a great opportunity to get our name out even more," Albright said. "There's a huge volume of people that come to this market and this area."
Downtown Inc held a ribbon-cutting to welcome the new stand, located in the northwest corner of Central Market, at 10 a.m. Tuesday, Oct. 3.
Albright said he and Kuhn were looking to open a location in either Gettysburg or York.
The open spot in Central Market seemed like the perfect fit, he said.
"As soon as we saw it, we looked at each other and said, 'This is it, what do we have to do to get in here,'" Albright said.
The stand will be open from 8 a.m. to 2 p.m. on Tuesdays, Thursdays and Saturdays and 11 a.m. to 2 p.m. on Wednesdays and Fridays. It will offer a limited market menu, including market exclusive items.
Breakfast options include the Maple Monster — a choice of pork or brisket with two eggs, bacon, American cheese and smoky syrup on a glazed maple doughnut.
The market menu also offers 3 Hog's flagship creation: the Brisket Mac and Cheese Grilled Cheese sandwich.

In addition to the Hanover location, Albright and Kuhn opened a location in Spring Grove in June 2017.
Right now, Albright said there are no plans for further expansion in the near future.
"We're just going to slow down for a bit," Albright said. "If things grow too fast, things start going haywire. We're going to take our time."
