The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, employee hygiene and issues with chemicals and how they're handled.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments that were inspected June 12-18.

OUT OF COMPLIANCE

Regular inspections:

Imperial Gourmet, 227 Pauline Dr., 17 violations

Action: Violations included food thermometers not readily accessible; sanitizer solution not available in food prep area; cutting blade observed with heavy accumulation of dried food residue; person in charge answered incorrectly to food safety questions; raw chicken stored above raw fish; stove top observed with encrusted grease; no water available at hand wash sink; plumbing system not maintained in good repair; bowls used for dispensing in bulk sauce containers; food held at improper temperature; lights above food prep table not shielded or shatter proof; employee's open beverage container observed in food prep area; wet wiping cloths not stored in sanitizer solution; and evidence of facility using clam shells more than once.
