The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, employee hygiene and issues with chemicals and how they're handled.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments that were inspected June 5-11.

OUT OF COMPLIANCE

Regular inspections:

3 Hogs BBQ, 4 S. Water St., Spring Grove, 12 violations

Action: Violations included ice scoop stored on top of ice machine; sanitizer detected at improper level; kitchen not equipped with hand wash sink; open window with torn window screen; BBQ sauces being canned without proper lab testing; food held for undetermined amount of time; refrigerator operating at improper temperature; original food certificate not posted in public view; and observed 3-5 housefly-like insects in kitchen, 8-12 in prep area and too many to count in garage.

Lyndon Diner, 1353 Kenneth Road, 16 violations

Action: Violations included food employee wearing bracelet on cooks' line; accumulation of static dust on vent covers; mops not being hung to air dry; food thermometers not readily available; ice machine deflector plate observed with pink and black mold-like residue; soap not available at hand wash sink; paper towel dispenser empty at hand wash sink; ceiling tiles missing in food prep area; food held at improper temperature; mops and brooms stored in server area of kitchen; black mold-like substance observed on bain marie; plumbing system not maintained in good repair; and door to outside of kitchen being propped open.

Note: This is the fourth time this facility has been ruled out of compliance since August 2016.

Wendy's, 1137 Baltimore St., Hanover, 7 violations

Action: Violations included food held at improper temperature; vents above fryer units missing; walls observed with hole; large accumulation of liquid and encrusted grease in rear of fryers; floor drain cracked and broken; and entire rear and front of facility extremely dirty.

Note: This facility has since passed a follow-up inspection on June 13.

Complaints:

McDonald's, 2899 Whiteford Road, 7 violations

Action: Violations included standing liquid observed in washing machine area; fryer, grill, sink and front counter extremely dirty; mops not being hung to air dry; accumulation of dust on cooking equipment; brown substance observed in hand wash sink; and plumbing system not maintained in good repair.
