The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, employee hygiene and issues with chemicals and how they're handled.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments that were inspected May 29- June 4.

OUT OF COMPLIANCE

Regular inspections:

Starlight Diner, 1177 Carlisle St., Hanover, 16 violations

Action: Violations included food held at improper temperature; food thermometers not available; chipped ice scoop; dust pan cleaned in sink; shelving units observed with large accumulation of food residue and grease spillage; sink leaking; walls and floor extremely dirty; meat stored with no covering; food not properly labeled; lemon slicer observed with food residue; and light shield in cooler cracked.

Turkey Hill Minit Market, 4490 E. Prospect Road, 10 violations

Action: Violations included window cleaner stored in sink; person in charge answered incorrectly to food safety questions; cups stored directly on floor; clean utensils stored in contact with chemicals; mops not being hung to air dry; employee food and drinks intermingled with food intended for sale; warewashing equipment observed with buildup of filth; cupboards not cleaned; syrup spillage inside frozen beverage bag; nutritional information not available on donut case; mop bucket full of dirty liquid; and small, flying insects observed in and on containers of chopped onions, sauerkraut and relish beside roller grill.
