The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, employee hygiene and issues with chemicals and how they're handled.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments that were inspected May 22-28.

OUT OF COMPLIANCE

Regular inspections:

Guadalajara, 2600 E. Market St., 18 violations

Action: Violations included food held at improper temperature; walk-in cooler door bent; heavy accumulation of frozen condensate inside walk-in freezer; sanitizer at improper level; food employee wearing gloves without washing hands; food uncovered in storage; food and dishes in hand wash sink; wall and floor cracked; exit door has gap; improper pesticide being applied; person in charge answered incorrectly to food safety questions; wet wiping cloths not stored in sanitizer solution; canned food in direct contact with rodent trap; house-made sauces held past sell-by date; clean food equipment stored wet; and butter-flavored sauce stored in bottles labeled hot sauce.

Note: This is the second time this restaurant has been ruled out of compliance since April 2017.
