The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, employee hygiene and issues with chemicals and how they're handled.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments that were inspected May 8-21.

OUT OF COMPLIANCE

Regular inspections:

Red Lobster, 407 Eisenhower Dr., Hanover, 9 violations

Action: Violations included heavily soiled cardboard containers being reused; metal pans used as scoops; utensils and food equipment soiled with old food residue; shelving not clean; plastic storage containers deformed; piping under ice machine leaking; flooring and drains extremely dirty; and interior refrigerator door needs to be replaced.

Aki Japanese Restaurant, 1150 Carlisle St., Hanover, 8 violations

Action: Violations included clean equipment stored wet; ceiling tiles missing and heavily soiled; cooked chicken stored on top of raw chicken; leak observed in hot water valve; ceiling vents heavily soiled with encrusted grease; inside area of ice machine observed with black slimy residue; and inspection indicates evidence of roach activity in storage areas.

Note: This is the second time this restaurant has been ruled out of compliance since March 2017.

Other-than-regular inspections:

New ownership:

Turkey Hill Minit Market, 3690 E. Market St., 8 violations

Action: Violations included person in charge answered incorrectly to food safety questions; excessive powdered product spillage inside beverage machine; restricted pesticide being used; ingredients for donuts not publicly available; food stored at improper temperature; and mops not being hung to air dry.
