The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, employee hygiene and issues with chemicals and how they're handled.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments that were inspected April 10-23.

OUT OF COMPLIANCE

Regular inspections:

Dallastown Family Restaurant, 2695 S. Queen St., York Township, 14 violations

Action: Violations included food held at improper temperature; splash guard observed with accumulation of black, slimy mold-like substance; no baffles on hood system; walls and floors of kitchen extremely dirty; use of insecticide not allowed in food facility; light above dish machine not properly shielded; exit door has gap; using tape to repair plumbing system; fountain soda syrup hose in direct contact with floor; potato cutter observed with food residue; no sanitizer buckets available in food prep area; and hand wash sink in kitchen doesn't have single-use towels available.

J & S Pizza, 1155 Carlisle St., Hanover, 12 violations

Action: Violations included refrigeration unit not holding proper temperature; can opener observed with food residue; no soap available at hand wash sink; raw eggs stored above ready-to-eat foods; food not properly labeled; hood vents soiled with static dust and grease accumulation; facility has not written procedure for employees to follow when responding to event involving vomit or fecal matter discharge; and entire rear area of facility extremely dirty and dusty.

Big Mouth on the Run, 1310 N. George St., North York, 11 violations

Action: Violations included first aid supplies stored in food prep area; upper interior of microwave observed with food residue; plumbing system not maintained in good repair; bathroom doors don't self-close; static dust on fan blade guards; no employee with certified food manager certificate; and wiping cloths wedged into hood filtration system.

Note: This is the fourth time this facility has been ruled out of compliance since March 2017.
