The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, employee hygiene and issues with chemicals and how they're handled.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments that were inspected March 13-19.

OUT OF COMPLIANCE

Regular inspections:

Marcello's Pizza, 500 Hellam St., Wrightsville, 12 violations

Action: Violations included liquid cheese held at improper temperature; broken dining room table stored upside down in dining room; food employees not wearing proper hair restraints; old sticker residue on clean pans; original food certificate not posted in public view; accumulation of dust and food spillage on various surfaces and equipment; and large portions of ceiling in dining room and kitchen are patched.

China One, 2146 Palamino Road, Dover, 10 violations

Action: Violations included person in charge answered incorrectly to food safety questions; food stored open with no covering; accumulation of dirt and soil on various surfaces; bowl used as scoop in bulk sugar; wet wiping cloths not stored in sanitizer solution; employees improperly cleaning cutting boards; hand wash sink blocked; and working container of cleaner stored hanging on wok unit.

Note: This is the second time this restaurant has been ruled out of compliance since February 2018.
