The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, employee hygiene and issues with chemicals and how they're handled.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments that were inspected Feb. 6-12.

OUT OF COMPLIANCE

Regular inspections:

General Robert C. Lee's Spring Grove Hotel, 128 S. Main St., Spring Grove, 14 violations

Action: Violations included knife stored on top of surface with hardened mayonnaise; food employee certificate doesn't meet state requirements for food safety training; consumer advisory for consuming raw or undercooked food not provided; heavy accumulation of grease of light fixtures; no available sanitizer test strips; cracked or separating floor tiles in kitchen; employees not aware of major illnesses or allergens; heavy accumulation of static dust on fan guards inside refrigerator; and lights above grill not shielded or shatter proof.

Note: This is the second time this facility has been ruled out of compliance since November 2016.

Smokey Bones Bar and Fire Grill, 1301 Kenneth Road, 11 violations

Action: Violations included heavy accumulation of grease and static dust on ceiling vent guards in storage room; plumbing system not maintained in good repair; drain outside walk-in cooler extremely dirty; in-use pans a storage containers have old labels; clean dish racks stored on floor; and no paper towels available at hand wash sink in cooks line area.

Note: This is the second time this facility has been ruled out of compliance since December 2016.

Hanover Hungry Parrot, 1015 Baltimore St., Hanover, 16 violations

Action: Violations included food equipment stored next to hand sink area; sticky, soiled pans and utensils stored as clean; original food employee certificate not posted in public view; large amount of empty boxes in rear storage area; holes in wall above sink area; food not being date marked; deformed plastic utensils used for cooking; shelving units observed with food debris; facility has no procedures for employees to follow when responding to event involving vomit or fecal matter discharge; mops not being hung to air dry; entire rear of facility extremely dirty and dusty; and large accumulation of static dust build-up in ceiling vents throughout dining room.
