Latest food inspections: 2 out of compliance
The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.
Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, employee hygiene and issues with chemicals and how they're handled.
Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.
Below is a list of establishments that were inspected July 18-24.
OUT OF COMPLIANCE
Regular inspections:
Great Wall, 351 Loucks Road, 11 violations
Action: Violations included food not being date marked; restricted pesticide being used; tubs of raw meat stored directly on floor; bowls of cooked meat and rice stored uncovered; cutting blade observed encrusted with old food residue; rice cookers observed with encrusted grease and soil accumulation; soap not available at hand wash sink; floors throughout kitchen extremely dirty and dusty; and ceiling vent cover extremely dirty and covered in static dust.
Note: This is the second time this restaurant has been ruled out of compliance since Feb. 2016.

Dunkin Donuts, 391 Eisenhower Dr., Hanover, 7 violations
Action: Violations included facility does not maintain food employee certification records; original food certificate not posted in public view; donuts stored with no covering; refrigerator observed soiled with large accumulation of old, encrusted food residue and dirt; old food residue and dishes observed in hand wash sink; and entire floor observed extremely dirty with slimy residue, trash and drain flies.
Note: This is the second time this facility has been ruled out of compliance since July 2017.
