FOOD INSPECTIONS: 3 out of compliance
The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.
Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, employee hygiene and issues with chemicals and how they're handled.
Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.
Below is a list of establishments that were inspected June 6-12.
OUT OF COMPLIANCE
Regular inspections:
Hong Kong Buffet, 128 Newberry Pkwy., Newberry Township, 14 violations
Action: Violations included storage containers improperly labeled; metal pans without handles used as scoops; buckets of food stored directly on floor; no records available to show fish has been frozen before use; sponge observed with accumulation of black mold-like residue; accumulation of ice observed on ceiling in walk-in freezer; accumulation of black mold-like residue observed inside ice machine and reach-in cooler; old food residue observed in hand wash sink; plumbing system not maintained in good repair; and accumulation of static dust on fan guards inside walk-in cooler.
Note: This is the second time this restaurant has been ruled out of compliance since November 2015.
Ray's El Mariachi Restaurant, 103 S. Main St., Spring Grove, 11 violations
Action: Violations included employees not trained in food safety; sanitizing solution at improper levels; employees eating and drinking in kitchen; bowl used as scoop inside bulk sugar container; heavy accumulation of dust observed on air conditioning duct; rice held at improper temperature; food strainer observed with dried food debris; and plastic container stored inside hand wash sink.
Note: This is the second time this restaurant has been ruled out of compliance since May 2015.

Action: Violations included ice scoop holder mounted to wall damaging drywall; wet wiping cloths not stored in sanitizer solution; raw meat held at improper temperature; food thermometers not readily available; build-up of filth observed on manual warewashing sink; gasket under beverage cooling unit observed with accumulation of dirt and mold-like substance; old food residue observed in hand wash sink; door to outside being propped open; paper towel dispenser empty at hand wash sink; floor extremely dirty throughout kitchen; and large hole observed in ceiling over refrigerator.
