The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, employee hygiene and issues with chemicals and how they're handled.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments that were inspected March 21-27.

OUT OF COMPLIANCE

Regular inspections:

Aki Japanese Restaurant, 1150 Carlisle St., Hanover, 11 violations

Action: Violations included containers of cleaning solution not properly marked; wet wiping cloths not stored in sanitizer solution; deeply scored and discolored cutting boards; sanitizer solution at improper level; underside of refrigeration handles observed with encrusted food residue; stove observed with large accumulation of grease and dust; clean dish racks stored on floor; clean food equipment stored in wet manner; large accumulation of ice on floor around fan in walk-in freezer; floor underneath cook line extremely dirty; and entire hood system observed extremely soiled with black soot and encrusted grease.

Note: This is the third time this restaurant has been ruled out of compliance since March 2016.

Village Green Family Restaurant, 2300 E. Market St., 18 violations

Action: Violations included ready-to-eat foods not being date marked; person in charge answered inaccurately to food safety questions; buckets of chlorine cleaner stored on same shelf as food; raw egg shells stored over ready-to-eat foods; tongs hanging from stove piping; wet wiping cloths not stored in sanitizer solution; potatoes, chili and meat sauce held at improper temperature; time used in lieu of temperature to control ready-to-eat foods; sanitizer at improper level; food residue and crust build-up observed in nozzles of cappuccino machine; food residue observed on can opener; old food residue observed on milk shake machine; heavy dust build-up observed outside hood vent system; sticky residue observed underneath juice and soda machines; cardboard being used as shelving; hand wash sink being used as food prep area; floors in kitchen cracked; doors in rear have gaps; no sign at hand wash sink reminding employees to wash hands; ceiling tiles missing throughout facility; and mops not being hung to air dry.

Note: This is the second time this restaurant has been ruled out of compliance sine December 2015.
