The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, employee hygiene and issues with chemicals and how they're handled.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments that were inspected Feb. 14-20.

OUT OF COMPLIANCE

Regular inspections:

Round the Clock Diner, 222 Arsenal Road, 15 violations

Action: Violations included rubbing alcohol observed in food prep sink area; food employee observed wearing watch; food-dispensing tool in rice and sugar stored without handle above top of food; wet wiping cloths not stored in sanitizer solution; raw chicken thawing in standing water; time used in lieu of temperature to control potentially hazardous food; shelving in walk-in cooler observed rusted; two deeply scored cutting boards; soda fountain nozzles observed with food residue; cutting blade on table-mounted can opener observed with food residue; heat lamps observed with food residue and static dust; clean knives stored in area not easily cleanable; cleaning scrubby observed in hand wash sink; covered trash can not available in women's bathroom; and mops not being hung to air dry.

VFW Post No. 7045, 341 Yorkanna Road, 7 violations

Action: Violations included food being stored directly on floor inside walk-in refrigerator; cooking pans observed with deep scratches; chemical sanitizer in dishwasher not at proper level; accumulation of static dust observed on fan guard and blades in kitchen; strong noxious odor emitted from grease trap in ware washing area; and painted wall surfaces behind sink observed chipping or flaking.

Cracker Barrel, 236 Pauline Dr., 16 violations

Action: Violations included original food certificate not posted in public view; food dispensing utensils in sugar and flour not stored with handle above top of food; in-use tongs observed hanging on handles not easily cleanable; bags of rice, sugar and flour in direct contact with empty waste cans; ware washing equipment observed with build-up of filth and food residue; employee wearing gloves to scrape dishes did not remove gloves or wash hands before putting dishes away; food pans and storage containers observed with old sticker residue; table under grill observed with encrusted grease and soil accumulation; chlorine chemical sanitizer observed at improper level; single-use items stored in direct contact with holiday decorations; broken crates and food debris observed in outside dumpster storage area; floor in dishwashing area made of cracked tile; floor and walls in storage area observed extremely dirty and dusty; heavy accumulation of static dust observed on ceiling vents; and mops not being hung to air dry.
