FOOD INSPECTIONS: 3 out of compliance
- Three restaurants combine for 31 violations in out-of-compliance reports.
- Jim Mack's Ice Cream, violations include pink slime and strips of dead flies.
The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.
Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, employee hygiene and issues with chemicals and how they're handled.
Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.
Below is a list of establishments that were inspected Jan. 10-16.
OUT OF COMPLIANCE
Regular inspections:
Illiano's J & P Restaurant and Pizzeria, 1154 W. Elm Ave., Hanover, 7 violations
Action: Violations included foods not being date marked; food employees observed without proper hair restraints; employee observed touching cheese with bare hands; time used in lieu of temperature to control ready-to-eat foods; warewashing equipment observed with large build-up of filth and food residue; and sanitizer in dishwasher detected at improper level.
Note: This is the second time this restaurant has been ruled out of compliance since Dec. 2015.
Jim Mack's Ice Cream, 5745 Lincoln Hwy., 15 violations
Action: Violations included facility has no procedures for employees to follow when responding to event involving vomit or fecal matter discharge; employees no trained in eight major allergens and big six illnesses; original food certificate not posted in public view; food employee observed wearing bracelet; employee's open beverage container observed in kitchen; plastic cup beings used as scoops inside ice cream freezer; pink slime observed inside bulk ice machine; ice cream debris observed under and on shelving inside walk-in freezer; wiping cloth observed on top of ice cream freezer rather than soaking in sanitizer solution; ice cream container lids stored directly on floor; employee observed washing hands in wrong sink; outside waste handling unit's lid observed open when not in use; a portion of ceiling observed breaking with paint peeling; glue strips full of dead housefly-like insects observed hanging in ice cream manufacturing room; and no paper towels available at hand wash sink.
Sushi by Jay at Weis Markets, 1800 Roosevelt Ave., 9 violations
Action: Violations included sauces and other ingredients not properly labeled; bowls being used as scoops in bulk rice container; wet wiping cloths not stored in sanitizer solution; raw fish portions observed thawing improperly; time used in lieu of temperature to control ready-to-eat foods; bain marie observed with accumulation of dust, dirt and food residue; food pans observed with food crumbs and soil accumulation; non-food contact surfaces not cleaned frequently enough; and single-service take out containers stored in bin with non-food items including towels and soiled cardboard boxes.
