The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, employee hygiene and issues with chemicals and how they're handled.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments that were inspected August 31- September 6.

OUT OF COMPLIANCE

Regular inspections:

Brothers Pizza, 140 Newberry Pkwy., Newberry Township, 20 violations

Action: Violations included food not being date-marked; employee's open beverage container observed in prep area; prepackaged chips stored directly on floor; hood filter can't be cleaned in place or easily removed; soiled food equipment stored on floor; no available sanitizer test strips; accumulation of standing water observed next to grill area; food residue observed around cheddar cheese nozzle, fruit punch nozzle, iced tea nozzle and floor mixer; ice shoot observed with black mold-like residue; plastic pots stacked inside one another with food residue on outside surfaces; fry baskets observed with accumulation of grease debris; black mold build-up on door and inside shelving of reach-in freezer; areas under fryers, grill and reach-in coolers not cleaned frequently enough; clean food equipment stored in wet manner; plastic utensils stored incorrectly; employee observed washing pizza cutter in hand wash sink; hand sink drains slowly; no sign at hand wash sink reminding employees to wash hands; hole observed in wall of walk-in cooler; accumulation of static dust on hood system above oven; and employee's personal folding chair stored on rack with food cans.

Note: This is the second time this restaurant has been ruled out of compliance since Feb. 2015.

Cracker Barrel, 13600 Wolfe Road, New Freedom, 9 violations

Action: Violations included hood vents and traps missing in several places; sanitizer observed at improper levels; handles of oven observed dirty with encrusted food debris; microwave units observed with old food splash; slicer observed with large amounts of food residue; entire area under grills heavily soiled with grease, trash and old food debris; clean food equipment stored in wet manner; walk-in freezer observed with large accumulation of ice and frost build-up; shelving under tables of prep area extremely dirty; hood vents observed with large accumulation of encrusted grease; and large accumulation of static dust observed in ceiling vents and prep area.

Note: This is the second time this restaurant has been ruled out of compliance since May 2015.

Super Store, 103 York St., Hanover, 7 violations

Action: Violations included cutting boards observed deeply scored; prep table observed with accumulation of dust, dirt, food residue and debris; door grooves on refrigeration unit not cleaned frequently enough; basement floor wall juncture not closed tightly enough; prep area extremely dirty; wall leading into basement has holes; no pest control program in place; and 25-50 live roaches observed in basement and retail area.

Note: This is the second time this facility has been ruled out of compliance since June 2015.
