The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, employee hygiene and issues with chemicals and how they're handled.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments that were inspected August 24-30.

OUT OF COMPLIANCE

Regular inspections:

Route 74 Restaurant, 4980 Carlisle Road, Dover, 8 violations

Action: Violations included fans in food prep area observed with heavy accumulation of static dust; metal shelving is rusted; refrigerator not in use observed with mold-like substance on interior surfaces; warewashing equipment observed with limescale buildup and food residue inside; ice machine observed with mold-like residue; food storage containers observed with sticker residue; plumbing system not maintained in good repair; and clothing, equipment parts and debris found in corners of outdoor storage shed.

Sonic Drive-in, 290 Wilson Ave., Hanover, 12 violations

Action: Violations included food employee wearing bracelet, watch or ring; employee's beverage container observed in food prep area; employee cell phone laying on prep table; employee observed with wiping cloth hanging out of back pocket; walk-in freezer does not close properly; loose rubber gaskets on walk-in freezer; numerous holes outside walk-in freezer door; black mold-like substance observed on side walls of ice machine; onion slicer observed with food residue; fan guards in walk-in cooler observed unclean; condiment holders observed with large amounts of dust, dirt and food residue; food debris observed in refrigerator; plastic curtains soiled with food residue; shelving inside sandwich cooler observed with food splatter; clean equipment stored in window sill; clean lids soiled with soda and syrup splash; utensils observed in hand wash sink; and oil drops forming above grill area.

Note: This is the second time this facility has been ruled out of compliance since June 2015.
