With this burger, you, too, can be Notorious

Want to impress friends and family at a weekend cookout? Then consider these loaded burgers from Notorious Burgers in Carlsbad, California. The recipe is courtesy of the restaurant’s head chef, Brian Gruber.

Notorious Burgers is known for its decadent burgers and an extensive list of craft beers.

The Notorious Burger

Serves: 6


1 cup Ken’s mayonnaise

1 tablespoon A-1 Sauce

1 teaspoon sriracha

1/2 teaspoon Sambal Oelek

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon Old Bay seasoning

1/2 teaspoon Cajun seasoning

1 teaspoon paprika

1/4 cup ketchup

1/4 cup Thousand Island salad dressing

1 teaspoon fresh minced garlic

1 tablespoon of your favorite barbecue sauce

Pinch of salt and pepper


3 pounds ground beef short rib, chuck and brisket combo (1 pound of each; ask your butcher for “coarse grind”)

11/2 cups grilled onions

12 slices Tillamook cheddar

12 slices honey cured bacon (cooked)

6 brioche buns

12 tomato slices

3 cups chopped iceberg lettuce

Salt and pepper

Mix Notorious Sauce ingredients well and set aside.

Divide the ground beef mixture into 6 even balls. Apply a liberal amount of salt and pepper to each ball.

Smash ground beef mixture onto flattop griddle or pan. Cook first side for 4 minutes and then flip the patty.

Add grilled onions, 2 slices of cheese and 2 slices of bacon to top of each patty. Cook for an additional 4 minutes for medium rare.

Butter a pan or griddle and toast the insides of both sides of the buns. Remove bun and repeat for all 6 buns.

Liberally spread Notorious Sauce on inside of both sides of buns.

Add tomato, then 1/2 cup of chopped lettuce to bottom half of each bun, then place the patty with grilled onion, cheese and bacon on top of the lettuce bed and repeat for all six buns.

Place the top of each bun on the burgers, and enjoy your very own Notorious Burger.
