The state's Department of Agriculture conducts yearly inspections of food-serving establishments to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should auto´matically consider establishments non-compliant. Called "critical violations," they include food temperature issues, issues with chemicals and how they're handled, and employ´ee hygiene.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments listed as compliant and out-of-compliance for inspections conducted July 3-15.

OUT OF COMPLIANCE

Back Woods Sports Bar & Grill, 1875 Old Trail Road, Etters.

Action: Violations included an ice machine drain pipe gushing water onto a plate next to the floor drain; a sewage overflow and strong odor; no single-use towels, continuous towels or air-drying device at the handwash sink in the kitchen/serving area; evidence of ant-like insect activity too numerous to count on the food preparation table.

Comment: A manager could not be reached.

Action: Violations included the food facility was not removing dead pests; a dead mouse was observed under the canned-goods storage area; numerous, dried, mouse-like droppings under and around the food storage area in the kitchen, storage area in front of the walk-in cooler, toaster area, short-order cook station and waitress areaa loaf of moldy bread in the work area next to the grill; frozen foods not maintained in a frozen state in the walk-in freezer; raw chicken thawing at room temperature in a bowl of standing water; no thermometers in walk-in cooler and bain marie; loose or broken door gaskets on bain marie; walk-in freezer not in proper working order; cappuccino machine contained coffee powder residue on the spout; pink, mold-like substance on the deflector plate of the ice machine; slicer contained food residue; food spillage in the bottom of the reach-in freezer; flaking paint on the wall next to the ice machine; standing water in the walk-in freezer; missing ceiling tiles in the storage area.
