The state's Department of Agriculture conducts yearly inspections of food-serving establishments to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food-temperature issues, issues with chemicals and how they're handled, and employee hygiene.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments listed as compliant and out-of-compliance for inspections conducted Dec. 11-18.

OUT OF COMPLIANCE

Action: Violations included possible cross contamination; raw meats were stored directly above fresh produce inside the walk-in refrigerator; a spray bottle of oven cleaner wasn't properly labeled; an employee's beverage was uncovered in the food-preparation area; a food employee involved in food preparation was not wearing proper hair restraints; food was stored uncovered inside every refrigeration unit; a single-use disposable bowl was being used as a scoop inside the rice cooker; an ice scoop was stored directly on top of the bulk ice machine; a food-dispensing utensil handle was in direct contact with food on the buffet; improper thawing and cooling; rusted shelving units inside the walk-in refrigerator; an accumulation of static dust and grease on the exhaust hood and hood filters; single-use items were being reused; dried food debris found on many kitchen utensils; soiled and previously-used buffet service pans were reused at the buffet without washing, rinsing and sanitizing; handles to all refrigerated units contained food residue; food debris found on many kitchen appliances; wet wiping cloths were not stored in sanitizing solution; a screened door in the kitchen had a gap at the bottom that did not protect or prevent against insect and rodent entry.

Action: Violations included medicines and personal care products stored above food and single-use items; hot water was turned off at one employee hand sink; sauce was held below proper temperatures; stone bowls used for food were not easily cleanable; raw wood was used as a shelf under the dish machine; walk-in freezer door handle was missing; chlorine chemical sanitizer was not at proper levels; a can opener contained food residue; hot water did not turn off at one employee hand sink; men's restroom for employees was not self closing; four or five hand sinks did not have paper towels; soap was not available at the handwash sink in the bar area; fan covers were not clean; food facility lost its certified supervisory employee and did not replace the certified employee as required.
