The state's Department of Agriculture conducts yearly inspections of food-serving establishments to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, issues with chemicals and how they're handled, and employee hygiene.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments listed for inspections conducted Oct. 10 to Oct. 16.

OUT OF COMPLIANCE

American Legion Post 605, 57 W. Main St., Dallastown.

Action: Violations included improper reheating of potentially-hazardous foods; wet, wiping cloths in the food preparation area were not being stored in sanitizer solution when they were not in use; raw sausage was stored inside a pan with other cooked meats inside the walk-in refrigerator; sanitizer test strips were not available to determine appropriate sanitizer concentration; drywall inside the toilet stall of the ladies restroom was torn and broken; food was being stored directly on the floor inside the walk-in refrigerator; static dust had accumulated on the fan guards inside the walk-in refrigerator; an employee's open coffee container was observed in the food preparation area; a cook was observed washing in hot, soapy water pots, pans and utensils, then sanitizing and air drying them, while completely skipping the rinsing process; an employee involved in food preparation touched ready-to-eat foods (hard-boiled eggs) with their bare hands.

Comment: A legion official could not be reached. According to the inspection report, many violations were corrected on the spot.
