Lindsey Hemman, 16, of Red Lion earned a blue ribbon in the PA Preferred Cookies, Brownies and Bars contest at the York Fair, and she did it by downplaying the required main ingredient: Chocolate.

"I don't like things too chocolatey," Hemman said about her recipe creation.

Her favorite Cookies N Cream candy bar became the inspiration for this brownie veteran's latest recipe creation.

Lindsey has followed in the footsteps of her mom, veteran fair contestant, Linda Hemman.

Over the last five years, Lindsey has been able use her brownie expertise to represent the York Fair at the Pennsylvania Farm Show, an accomplishment to be envied by Culinary Corner contestants more than twice her age.

She came in fourth at the Farm Show with a brownie with peanut butter cups and bananas.

The contest, sponsored by PA Preferred and ShurFine, was for children ages 8 to 18.

This year, three people entered the competition, but only two showed up the day of the contest.

The second place ribbon went to Laura Ardner, 13, of York for her Double Chocolate Chip Cookies.

Judges Linda Dennish and Marcia Smyser decided the winners based on flavor, texture, inside characteristics (even grain, evenly baked) and outside characteristics (uniform size, shape and overall appearance).

First place earned a $50 ShurFine gift certificate and a $20 cash prize. Second place earned a $25 ShurFine gift certificate and a $15 cash prize. The third place prize of a $15 gift certificate and a $10 cash prize were not awarded.

Cookies and Cream Fudge Brownies

3oz butter, plus extra for greasing

1 cup cream cheese

1/2 teaspoon vanilla

1 cup sugar

2 PA Preferred eggs

3 tablespoons unsweetened cocoa

3/4 cup flour

1 cup crushed Cookies N Cream candy bars

Frosting:

4 tablespoons butter

1 tablespoon milk

2/3 cup powdered sugar

2 tablespoons unsweetened cocoa

1 cup crushed Cookies N Cream candy bars

Preheat oven to 350 degrees. Lightly grease an 8 inch square pan and line the bottom with parchment paper.

Beat together cream cheese, vanilla and 5 tablespoons sugar until smooth.

Beat eggs and remaining sugar together until light and fluffy. Heat gently the butter and unsweetened cocoa in a pan, stirring until the butter melts and it mixes. Stir this mixture into egg mixture.

Fold in the flour. Pour half the batter into cake pan and smooth the top. Carefully spread the cream cheese mixture on top.

Sprinkle the candy bar crumbs on top of the cream cheese. Cover with the remaining cake batter. Bake in oven 40-45 minutes. Let cool in pan.

Melt butter in the milk. Stir in the powdered sugar and cocoa. Spread frosting over brownies and sprinkle crushed candy bars over the top.
