The state's Department of Agriculture conducts yearly inspections of food-serving establishments to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, issues with chemicals and how they're handled, and employee hygiene.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments listed for inspections conducted Feb. 28-March 6.

OUT OF COMPLIANCE

Amora Pizza, 1446 Baltimore Pike, Hanover.

Action: Issued 16 violations, including a working container of Windex cleaner stored above or on the same shelf with food and related articles, employees in kitchen grill area not wearing proper hair restraints, an employee touching breads with bare hands, wet wiping cloths not being store in sanitizer solution, raw chicken stored directly on the floor in walk-in cooler, garbage can being used to hold containers of cheese during shredding, ground beef and roast beef thawing at room temperature on the prep tables, potentially hazardous foods without written procedures or documentation to verify disposition of food, can opener with dried food residue on blade, mixer with dried dough residue, slicer with dried onion residue, shelving with food debris build-up, doors and drawer handles sticky to touch, hood filters with grease build-up, wiping cloths not being laundered daily, leaking hot water tank, dirty mop water in bucket from previous day, paper towel dispenser empty at the handwash sink, and a wall in a storage area "has what appears to be black mold-like substance," according to the inspection report.

Comment: Owner Sergio Carannanpe said it was his first day open when the inspector came and he didn't "have things put away yet." He said staff has cleaned everything that was dirty and has properly stored all of the food and chemicals. Employees are now wearing gloves and hair nets, and he has versed them on proper food safety procedure.

He said he's pretty sure he has addressed all of the violations.

Arby's, 2810 E. Market St., York.

Action: Issued 8 violations, including a container of degreaser stored on the same shelf with food and related articles, personnel not wearing hair restraints while handling food, an employee at the drive-thru using a cup to scoop ice "and her hands touched the ice every time," tomatoes, cheese and shredded lettuce kept in sandwich bainemaries with temperatures of 59 and 50 degrees, equipment in sanitizer sink not "even touching the sanitizer," slicer with food residue, single-use containers stored food-side-up in the drive-thru, and self-service soda drain line clogged.

Sensenig Meats at Morningstar Market, 5309 Lincoln Highway West, Thomasville.

Action: Issued four violations, including in-use knives stored in soapy water, pan with no handle used as an ice scoop, steam table food held at 102 degrees rather than the 135 degrees or above as required, inside of ice machine not clean, and single-use containers stored food-side-up.

Comment: An employee said the owner will be out-of-town for weeks and nobody else is permitted to speak with the media.
