The state's Department of Agriculture conducts yearly inspections of food-serving establishments to ensure public safety and safe food-handling practices. Schools are inspect´ed twice per year, according to the Bureau of Food Safety and Laboratories.
Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should auto´matically consider establishments non-compliant. Called "critical violations," they include food temperature issues, issues with chemicals and how they're handled, and employ´ee hygiene.
Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.
Below is a list of establishments listed as compliant and out-of-compliance for inspections conducted March 21-28.
OUT OF COMPLIANCE
FlapJacks LLC, 9 North US Route 15, Dillsburg.
Action: Violations included a food employee wearing single-use gloves without a prior hand wash; paint stored above or on the same shelf with food in the storage area; soup cooling at room temperature on the counter, which is not a proper cooling method; food held in the baine marie at 56 degrees, instead 41 degrees or below as required; wood and cardboard used in the warewash area was not a smooth, cleanable surface; sanitizer test strips were unavailable, door gaskets on the baine marie/walk-in cooler were loose; interior surface of baine marie had an accumulation of ice, food residue and was leaking on the bottom; deeply-scored cutting boards were not resurfaced or discarded as required; wash solution temperature in the mechanical warewash equipment was 100 degrees rather than 120 degrees or above as required; plastic tableware was not displayed in a manner so that only the handles were touched by employees; cold water at handwash sinks was not under pressure during inspection; hot water heater was not producing enough hot water to supply handwash sinks/mechanical warewash machine at the time of inspection; handwash sink/mechanical warewash machine was leaking; handwash sink in bar area did not have soap, single-use towels, continuous towels or air drying device; ceiling tile was missing and exposing insulation in the warewash area.
