The state's Department of Agriculture conducts yearly inspections of food-serving establishments to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.
Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, issues with chemicals and how they're handled, and employee hygiene.
Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.
Below is a list of establishments listed as compliant and out-of-compliance for inspections conducted March 20.
OUT OF COMPLIANCE
Eastern Bubble Tea & Smoothie, 2899 Whiteford Road, York.
Action: Violations included the owner not wearing a hair restraint; wet wiping cloths not being stored in sanitizer solution; no thermometer in the refrigerator; ambient air temperature of the one refrigerator was 49 degrees and not 41 degrees or lower as required; handwash sink did not have water at a temperature of at least 100 degrees due to owner turning off the water heater; handwash sink was blocked by a refrigerator; money and other items were stored in the handwash sink.
Comment: Manager Jessie Zhu said all violations have been corrected.
Staubs Landing Restaurant & Pub, 612 Frederick St., Hanover.
Action: Violations included the ice scoop handle touching the ice; in-use utensils were stored in sanitizer water; food was stored directly on the floor of the walk-in freezer, rather than 6 inches off the floor as required; internal temperature of two sauces inside the baine marie was 48 degrees; the baine marie was not holding food items at 41 degrees or less as required; walk-in freezer door handle was in need of repair; can opener contained food residue and was not clean to sight and touch; excessive old food debris was under the shelving unit on the cooks line; old food debris was under the salad baine marie cutting board; baine marie cutting board was heavily scored and not clean; clean dish racks were stored on the floor in the dish area; no sign was posted at a handwash sink to remind food employees to wash their hands; dust and grease were observed inside the hood filters;
Comment: Owner Chris Staub said all violations have been corrected.
Two Brothers Bar and Grill, 1570 Robin Hood Drive, Newberry Township.
Action: Violations included a food employee changing tasks-that may have contaminated hands-without a proper handwash in between; a food employee washed their hands at the three-compartment sink rather than the designated handwash sink; a food employee was observed touching bread with bare hands; food in the baine marie was stored open with no covering; raw beef was stored above open, ready-to-eat food; wet wiping cloths were not stored in sanitizer solution; rusty shelving in the baine marie refrigeration unit; a large amount of ice accumulation around food in the reach-in freezer; mechanical warewashing equipment contained a build up of old food residue and was not cleaned before use; mechanical warewashing equipment was not being operated according to the manufacturers data plate; the wash solution temperature was 95 degrees, rather than 110 degrees or more as required; an accumulation of residue on the dish racks used in the mechanical warewash machine; the food preparation and warewash area had an accumulation of dust, dirt, old food residue and debris on non-food contact surfaces; walls and floors in the warewash area were encrusted with grease and soil; no chemical sanitizer was being used on a spatula after washing and rinsing, or prior to use; handwash sinks in restrooms did not allow 15 seconds of continuous flowing water; an insect-control device in the food preparation/warewash/storage area had potential to contaminate food, equipment and/or utensils.
Comment: Manager Angie Drivas said the restaurant is working to correct all violations.
