The state's Department of Agriculture conducts yearly inspections of food-serving establishments to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, issues with chemicals and how they're handled, and employee hygiene.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments listed for inspections conducted Aug. 23 to Aug. 29.

OUT OF COMPLIANCE

Francesco's Pizza, 663 Wyndamere Road, Lewisberry.

Action: Violations included no date markings on food products in walk-in cooler; shelled eggs on shelf above ready-to-eat products in the walk-in cooler; personal drink stored in ice bin used for customer drinks; can opener blade beginning to rust; no sanitizer being used when performing warewash duties; rusty shelving throughout walk-in cooler; dust, dirt and debris on the floor under the pizza oven; no shields or shatterproof bulbs above clean dishes in warewash room; water leaking from extra-hot water heater and from jet pump, which is creating standing water on the basement floor; excessive ice formations on the floor of downstairs walk-in freezer; food products on floor of walk-in freezer; cold holding unit at salad bar not working properly.

Comment: Owner Romeo Alvrado said violations have been corrected and he anticipates passing the follow-up inspection.
