The state's Department of Agriculture conducts yearly inspections of food-serving establishments to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, issues with chemicals and how they're handled, and employee hygiene.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments listed for inspections conducted August 8 to August 15.

OUT OF COMPLIANCE

Dollar General, 3746 Centennial Road, Hanover

Action: Violations included a lack of separation between toxic substances and food, as laundry detergent and Airwick plug-ins were on or above the same storage cart as foods in the back storage area; women's restroom was not provided with a covered waste receptacle for sanitary napkins; back service door located in the storage room of the food facility had a gap, failing to protect against the entry of insects, rodents and other animals; ceiling tiles out of place in storage area. .

Comment: A manager declined comment without corporate approval.

Rambler Inn, 6600 Lincoln Highway West, Thomasville.

Action: Violations included dead insects in two bottles of liquor; food not held at proper temperatures in the walk-in cooler and stand-up refrigerator; a dog and dog bed were in the bar area; beer tap contained residue.

Comment: A manager could not be reached for comment.

Ruby Tuesday, 199 Eisenhower Drive, Hanover.

Action: Violations included torn gaskets at freezer, refrigerators and cold unit not replaced since previous inspection; temperature-measuring device not accessible; debris on floor of walk-in freezer; accumulation of film on ice machine; food employee was observed touching various foods, including ready-to-eat food, with bare hands; food employee observed changing tasks that may have contaminated hands without a proper handwash in between; accumulation of food debris on can opener; heavy accumulation of debris on spigots on handwash sink in the rear grill area; empty paper towel dispenser at the handwash sink; chicken food stored open, with no covering, in refrigerator; evidence of live ants activity in kitchen area at the rear door going into dining area, but facility does have a pest control program; clean dish racks observed stored on the floor in dish wash area; numerous pans, stored as clean items, were not clean; splash guard on hand wash sink in rear grill area is not installed properly; heavy accumulation of static dust on ceiling intake vents inside the entrance doors to the kitchen; food facility operator failed to post an original, valid Food Employee Certification in a location conspicuous to the consumer; dirty food utensils in rear grill area stored in a container of water which was not maintained at properly-heated temperatures; accumulation of syrup on soda fountain dispenser.

Action: Violations included food handlers not wearing hair restraints.

Comment: A manager said the violation has been corrected.
