The state's Department of Agriculture conducts yearly inspections of food-serving establishments to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, issues with chemicals and how they're handled, and employee hygiene.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments listed for inspections conducted June 28 to July 4.

OUT OF COMPLIANCE

Sunnyside Farm, 1865 York Road, Dover.

Action: Violations included the processing of chickens being completed outside with no floors, wall or ceiling that is easily cleanable; food facility does not have a three-compartment sink for manual washing; chicken processing equipment is not cleaned to sight and touch; food facility does not have a handwash sink located in the preparation area with hot and cold running water, signage, soap and paper towels; food facility does not employ a certified employee as required; no current water test available to prove water is potable from coliform and nitrates.

Thai House Cuisine, 3609 E. Market St., York.

Action: Violations included chlorine chemical sanitizer residue detected in the final rinse cycle of the dishwasher; an employee's open beverage container observed in food preparation areas; dumpster area was cluttered with boxes, wood and other items; a pan of sauce not cooling at proper temperatures; inside of cook's microwave falling apart; handwash sink not accessible at all times; Quaternary Ammonia sanitizer was in excess of proper concentration; in-use spoons were stored in standing water; ice scoop handle was touching ice; food equipment was not clean to sight and touch; a person in charge not designated or present at all hours of operation; observed several dead and one live cockroach-type insect in the kitchen; employee's personal medicines and personal care items observed on top of ice machine and not stored in dressing rooms or identified storage area.
