The state's Department of Agriculture conducts yearly inspections of food-serving establishments to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, issues with chemicals and how they're handled, and employee hygiene.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments listed for inspections conducted June 18 to June 28.

OUT OF COMPLIANCE

Old Country Buffet, 905 Loucks Road, York.

Action: Violations included dirty knives at chicken sink utensil holder; no trash can with lids at handwash sinks; open boxes of cranberries and raisins in storage room; dirty packages and containers in storage area; light shield broken in walk-in cooler; clean utensils stored in a dirty bin in dishwashing area; biofilm build-up in ice machine; missing and damaged ceiling tiles at dessert area; static dust on light fixtures in bathroom; dirty shelves under food buffet; accumulation of static dust on light fixtures at seating booths; static dust on fixtures above food entrees; dirty utensils in food area; scoop stored in cornbread with handle in product; dirty mixer in bakery area; personal plate of brownies stored in dessert tray holder; bowls in bakery not properly air dried; manual can opener found dirty; mold along wall at vegetable sink; dirty floors in walk-in cooler; items not covered in walk-in cooler; no labels on items in walk-in cooler.

Action: Violations included bugs found in a Scotch whiskey bottle behind bar; microwave does not meet safety standards; fan guards in walk-in cooler have static dust accumulation; employee behind bar not using tongs to dispense lemons, orange slices and more; ice machine area of the food facility is extremely dirty, dusty and in need of cleaning; stainless steel wall covering is not flush to the wall behind grill; heavy accumulation of grease on side of a freezer; temperature measuring device not available, readable or readily accessible; food stored with no covering in cold hold units; tortilla chips under the bun toaster area stored open with no covering; hand wash sink being used for multiple purposes; hand wash sinks and facets not in clean, sanitized condition; floor, wall and ceiling in floor-grill area is cracked, roughened and is not a smooth, easily-cleanable surface; single-service, single-use articles stored in outside storage shed area directly on the floor, and not six inches above the floor; food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration; splash guard needed on hand wash sink behind bar; ice scoop stored in unclean container at big ice machine; pans used for fish have a heavy accumulation of dried debris; outside grease dumpster overflowing; all microwaves had heavy accumulation of food debris; can opener had food debris accumulation; observed wet wiping cloths in waitress area not being stored in correct sanitizer solution.
