The state's Department of Agriculture conducts yearly inspections of food-serving establishments to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, issues with chemicals and how they're handled, and employee hygiene.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments listed for inspections conducted April 24-30.

OUT OF COMPLIANCE

Back Woods Sports Bar & Grill, 1875 Old Trail Road, Newberry Township.

Action: Violations included containers being used for storing chemicals not properly marked; chemical containers stored on same shelf with food, equipment and/or single-service articles; ammonia sanitizer being used at an extremely high concentration; raw beef stored above ready-to-eat foods in the walk-in cooler; food ingredient storage containers are not labeled properly; coleslaw not held at proper temperature; potentially hazardous ready-to-eat food held for more than 48 hours and not properly marked; wood under microwave is not a smooth, easily-cleanable surface; shelving in walk-in cooler is rusty and not a cleanable surface; soda lines and/or non-integral cold plate device installed in ice bin and in contact with ice used for consumer beverages; sanitizer test strips unavailable; deeply scored cutting boards not resurfaced or discarded as required; chlorine chemical sanitizer residue in dishwasher not at proper levels; food equipment and dishes stored with an accumulation of old food residue; refrigerators/freezers have an accumulation of food residue on the inside bottom; can opener has food residue on blade; grill area has an accumulation of grease; heat lamps have accumulation of static dust; shelving in walk-in cooler has an accumulation of mold-like residue; utensils stored in cup with the food contact surface up; ice in handwash sink; standing water and numerous leaks in plumbing system; handwash sink in kitchen/bar area does not have towels or air drying device; no signs posted to remind food employees to wash their hands; tiles missing or not attached under dish machine; food employee personal items observed in bar/kitchen area; food facility does not maintain Food Employee Certification records as required.

Chow Down Family Restaurant, 7523 Carlisle Road, Wellsville.

Action: Violations included wiping cloth sanitizer not at proper levels; food employee's open beverage in food preparation area; several baked goods for sale and were not from an approved source; salad bar food not held at proper temperatures; wooden butcher block knife holder used to store knives; several refrigerator thermometers were either missing or not visible; loose rubber door gaskets observed in the walk-in cooling unit; salad bar temperature 4 degrees higher than required; chlorine chemical sanitizer in dishwasher not at proper levels; food contact surface not clean to sight or touch; can opener contained food residue; food slicer contained food residue; kitchen wiping cloth bucket had no sanitizer; shake machine had food residue on it; handwash sink in kitchen used for other tasks; cold water not working at handwash sink; women's restroom does not have covered trash bin for sanitary napkins.

Action: Violations included sanitizing solution, used to wipe down tables, was at toxic levels; cook working with exposed bandaged finger; food storage bottles not properly labeled; food utensils not properly stored; wiping cloths not stored in sanitizer solution; food stored uncovered inside refrigeration units; cardboard-lined shelves in reach-in refrigerator; lubricating oil leaking onto dough mixer; thermometers not readily available; sanitizer test strips not available; wash solution temperatures not at proper levels; water temperature not at proper levels; cutting knives stored as clean contained food residue; light bulb in walk-in refrigerator not shatterproof or properly shielded; no sign posted to remind food employees to wash their hands.

Comment: Manager Vincent Hernandez said all violations were corrected this week.
