The state's Department of Agriculture conducts yearly inspections of food-serving establishments to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, issues with chemicals and how they're handled, and employee hygiene.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments listed for inspections conducted April 11-17.

OUT OF COMPLIANCE

China One, 840 N. Route 15, Dillsburg

Action: Violations included chlorine sanitizer at higher levels than approved, food storage violations, a bowl used as a scoop in bulk containers, wet cloths in food preperation areas not properly stored in sanitizer solution, frozen chicken thawing at room temperature on the floor, mold-like and old food residue found inside the walk-in cooler, grease accumulation on hood, dishes and utensils in sink for handwashing

Comment: An English-speaking supervisor was not available for comment.

Myoumi House, 2535 E. Market St., York.

Action: Violations included a lack of controls in place to monitor the acidity in rice for sushi, an employee's open beverage container in food preparation area, raw animal foods stored above ready-to-eat foods in several areas, ice scoop handle touching the ice, wet wiping cloths not stored in sanitizer solution, food stored directly on the walk-in freezer floor, clumps in corn starch from shrimp not being properly sifted, dirty slicer, and dirt and grease on hood filters.

Comment: A manager could not be reached for comment.

Piazza Romana, 2350 N. George St., York

Action: Violations included cups without handles being used as scoops in bulk containers, wet wiping cloths not in sanitizer, sauce not kept at proper temperatures, no chlorine test strips for sanitizer, grease leaking above a mixing bowl, chlorine sanitizer not kept at proper levels, dishwasher cleaning materials not stored properly, clean pizza peels laying on top of a dirty oven, a dirty food slicer, to-go containers stored food-side up, no sign posted reminding employees to wash their hands.

Comment: A day manager said all violations have been corrected.

San Carlos, 333 Arsenal Road, York

Action: Violations included improperly stored cleaner, raw chicken stored above cooked beef inside walk-in refrigerator, breading with clumps and not properly sifted, dirty cooking utensils, utility sink not up to standards, plumbing system in need of repair.

Comment: Rich Tufarolo, part-time office worker at the restaurant, said the restaurant is now "in complete compliance."

"Within four days, everything was fixed. The inspector came back and declared us in compliance," he said.

Victor's of York, 554 S. Ogontz St., York

Action : Violations included an employee's open beverage container on a shelving unit above a cooking area, possible cross contamination, lack of storage for soiled items, stained cutting boards, chlorine sanitizer at improper levels, handwashing sink used as a dump sink, kitchen lights not shatterproof, open unscreened window and house flies in kitchen, no sign in men's restroom reminding employees to wash hands.

Comment : Management did not return voicemails seeking comment.

Wrightsville Sunoco, 802 Hellam St., Wrightsville

Action: Violations included improperly labeled sanitizer in the kitchen area, cleaners and sanitizers not properly stored, chlorine sanitizers at levels considered toxic, ready-to-eat baked goods not properly labeled, utensils not properly sanitized, no cold water at handwashing sink in restroom, handwashing sink does not run for at least 15 seconds as required, plumbing not in good repair, roll-up style door in receiving area does not close properly.

Comment: Jayshri Desei, a daytime employee at the location, said all violations are being corrected and management expects the business to be found in compliance when the inspector returns next month.
