The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, issues with chemicals and how they're handled, and employee hygiene.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments listed as out-of-compliance for inspections conducted July 18 - July 24.

OUT OF COMPLIANCE

Arooga's Grille House & Sports Bar, 375 Eisenhower Drive, Hanover

Action: Violations included a hot-water nozzle not operating at the hand-washing sink; a gap in the delivery door, which does not protect against the entry of insects, rodents and other animals.

Comment: Manager Drew Plank said all violations have been corrected.

Boch's Catering, 645 E. Middle St., Hanover

Action: Violations included mobile unit not providing water through a mixing valve that maintains water at 100 degrees, as required by department standards to operate a permanent food facility.

Chili's Grill and Bar, 1295 Carlisle Road, York

Action: Violations included food employee not using available sanitizer test strips or test kit to determine sanitizer concentration; chlorine chemical sanitizer residue detected in the final sanitizer rinse cycle of the dishwasher; old food debris on both panini grills and clean pans; three knives in the knife holder, underside of the shelf above steam table and dishes stored as clean were not clean; excessive food residue was not being scraped from dishes prior to washing; food employee storing clean food equipment while wet and not allowing time for draining or air drying; clean silverware stored eating-end up.

Comment: A company spokesman did not immediately return calls seeking comment.
