The state Department of Agriculture conducts annual inspections of food-serving businesses to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, issues with chemicals and how they're handled, and employee hygiene.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments listed as out-of-compliance for inspections conducted June 20 - June 26.

Action: Violations included working containers of cleaners not properly marked; eggs stored above ready-to-eat soup on a shelf in the walk-in refrigerator; loose door hinges on refrigerator door; loose rubber door gaskets on several refrigeration units; a broken spatula handle repaired with duct tape; deeply scored cutting boards not resurfaced or discarded as required; pink slimy material growing along the inside shield of the ice machine; slicer and can opener dirty to sight and touch; stainless steel dough pans dirty to sight and touch; soda gun and holder contain pink, slimy bacteria inside the area of the holder and gun; underside of refrigeration handles soiled with old food residue at the time of inspection; bottom shelf of refrigerator on cooks' line heavily soiled with old dirt and food; stove on cooks' line has encrusted grease and soil accumulation along the top, sides and bottom of equipment; plumbing system not maintained in good repair; old dirty, murky water inside of mop bucket; broken and cracked light shields; broken or missing fan cover in walk-in freezer; grease dripping from suppression line and light shield under grill area; accumulation of static dust on vent underneath the pizza oven; mops not being hung to air dry.

Action: Violations included food in the dry storage area and refrigeration units stored open with no covering; food storage containers not properly labeled; wet wiping cloths not being stored in sanitizer solution; shelled eggs held at 71 degrees, rather than 45 degrees or lower; sanitizer test strips or test kit were not available; thermometer not available or readily accessible in refrigeration equipment; large buildup of residue inside the dishwasher; slicer, grill, fryer equipment and can opener contained dust, dirt, food residue and debris; accumulation of old food residue in microwave; no sanitizer bucket available to store wiping cloths; fly swatter on prep table by slicer; clean knives stored in between the wall and bain marie; no sign or poster at the handwash sink reminding food employees to watch their hands; maintenance equipment and other items stored in the dry food storage area with potential to contaminate food equipment and utensils; food facility inspection indicates evidence of rodent activity in waitstaff area; large amount of fly-like insects in and around the potato peeler; Food Employee Certification records were not maintained as required.

Action: Violations included a food employee not using available sanitizer test strips or test kit to determine sanitizer concentration; excessive ice accumulation in the walk-in freezer; inside of microwave not clean to sight and touch; improper sanitizer level.
