The state's Department of Agriculture conducts yearly inspections of food-serving establishments to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, issues with chemicals and how they're handled, and employee hygiene.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments listed for inspections conducted July 18 to August 2.

OUT OF COMPLIANCE

Giant Food Store, North George Street and Beshore Road, Manchester.

Action: Violations included improper reheating of potentially hazardous foods in the deli department, including meatballs in a tomato-based sauce; heave accumulation of dust on the heating, ventilation or return-air duct covers on the ceiling in the produce department; green onions were not washed before being served; dough cutter not properly cleaned and stored; a disposable plastic cup was being used as a scoop inside a bulk ingredient storage container in the bakery; a mold-like growth on the exterior surface of the bulk ice machine in the produce department; a defective light shield in the meat/seafood department; soap dispenser found empty at one of two hand wash sinks in the produce department; hot water used for sanitizing in the bakery department warewashing machine did not reach proper temperatures; baking utensils, stored as clean, contained dried food debris.

Comment: Most violations were corrected on the spot, and the rest were corrected soon after, a manager said.

John Wright Restaurant, 235 N. Front St., Building 3, Wrightsville.

Action: Violations included potentially hazardous foods not being held at proper temperatures; cleaning solution stored among clean sheet pans; bartender working behind the bar while wearing bracelets and a ring; clean drinking glasses and coffee cups stored within splash range of the handwashing sink at the waitress station; a box of single-use disposable gloves were not properly stored; multiple use of a hand wash sink; mold-like growth on a part of a bulk ice machine in the main kitchen; dried, crusted food debris found on the blade of an electric food slicer; a short-order cook involved in food preparation was not wearing a hair restraint as required; glue strips containing dead houseflies were hanging from ceilings in food preparation areas; paper towels were not available at hand wash sink in the short-order, food preparation area.

Comment: A manager could not be reached for comment, but inspector comments revealed many violations were corrected on the spot.
