The state's Department of Agriculture conducts yearly inspections of food-serving establishments to ensure public safety and safe food-handling practices. Schools are inspected twice per year, according to the Bureau of Food Safety and Laboratories.
Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should automatically consider establishments non-compliant. Called "critical violations," they include food temperature issues, issues with chemicals and how they're handled, and employee hygiene.
Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.
Below is a list of establishments listed for inspections conducted July 3 to July 10.
OUT OF COMPLIANCE
Baker's Pizza, 890 Country Club Road, Dallastown.
Action: Violations included grease spillage on the floor around the grease trap in the basement; dark rings or stains on the floor surfaces around and under various cooking, baking and refrigerated equipment indicating improper cleaning; handwash sink being used for multiple purposes; food employee involved in food preparation touching ready-to-eat food (sandwich roll) with bare hands; food employee involved in food preparation not wearing proper hair and beard covers as required; food facility does not have sanitizer test strips or test kit to determine appropriate sanitizer concentration; improper manual dishwashing; broken/missing floor tiles in the middle of the kitchen floor; an open employee's beverage container in the food preparation area; food employee involved in food preparation while wearing a bracelet; door handles on large reach-in refrigerator have an accumulation of food debris residue; food debris/splatter on wall surfaces behind the food slicer and dough mixer; food debris spillage inside all refrigeration units; potentially hazardous foods (shredded pizza cheese and pizza sauce) being stored at room temperature rather than refrigerated.

Chick-fil-A, 1800 Loucks Road, Suite 606, York.
Action: Violations included a backroom hand sink in need of repair; floor drain under three-compartment sink was not clean; two food handlers not wearing hair nets; a food employee washed hands at the three-compartment sink instead of the designated handwash sink; chlorine chemical sanitizer was in excess of proper levels in the wiping cloth bucket; observed a pink bio film-type substance in the upper inside of the ice machine; chlorine concentration in the sanitizer solution was below proper levels in the ware wash sink.

Kramer at Market, 201 Memory Lane, York.
Action: Violation cited because food facility did not have a handwash sink located in the food preparation area.

Littles Family Restaurant, 1039 Baltimore St., Hanover.
Action: Violations included mouse droppings on sheet pan with mouse bait and pies, which appeared to have nibble bites at the crust area; ceiling tiles are broken/missing with water damage; can opener blade has dried food residue on it; utensils and food equipment not dried properly after cleaning; splatters on upper portion of orange juice dispenser; handwash sink used for multiple purposes; walk-in freezer has heavy condensation leak; stack of dirty wiping cloths at grill area; short order cook had cloth hanging out of back pocket; an insect-control device, not permitted in food service, was located in walk-in cooler with potential to contaminate food equipment or utensils; cleaned and sanitized utensils are being stored with food contact surfaces; food employee in short order-cook area not wearing proper hair restraints; food utensils in short order-cook area observed stored in a container of water with sanitizer not maintained at proper levels; walk-in cooler areas have large gaps at seams along walls and floor.

Action: Violations included ceiling vent had peeling paint in the smoker room; can opener, food slicer, soda nozzles, pan and shelves were unclean; soap and paper towel unavailable at the handwash sink in the cooks line area; bar refrigerator not holding at proper temperatures; two freezer doors not tight fitting due to ice accumulation; ceiling tiles are missing in several areas; observed one dead insect in a bottle of liquor; ribs and cole slaw not held at proper temperatures; intake/exhaust air duct needed cleaned or filters changed, as it was emitting dust and dirt into the air; several floor drains were not clean; single use to-go items are stored food side up; clean dish racks stored on the floor in dish area; drain line not connected to the bar soda holster; hot water knob on the cooks-line hand sink in need of repair.
